Welcome to the first edition of Kook With Kona! Chef Nico was supposed to make a delicious Shakshuka, but the dog stole all of the eggs. What’s a cooking show producer to do? It’s the El Kahuna SUV to the rescue. Battling angels and demons, Lina, the show producer, conquers a harrowing challenge to ascend the highest mountain to get the best eggs possible to bring back to the Kooks of Kona!

Here’s what you need.

  • 6 free-range eggs (only the best will do, as demonstrated by our video)
  • 1 can (28oz) of Mutti crushed tomatoes
  • 2 bell peppers (any colour)
  • 2 onions
  • 1 clove of garlic
  • 2 avocados
  • 250g of feta cheese
  • 1 lime
  • Cilantro
  • Spring onions
  • 1 chili pepper
  • Olive oil
  • Worcestershire sauce
  • Fennel seeds
  • Pepperoncini
  • Chilli flakes
Start by cutting your veggies. Chop your onions, slice the bell peppers, cut the lime into 6 quarters, and the avocado into cubes.
Put your cast iron pan on the stove, medium heat. Pour some extra virgin olive oil. Don’t be afraid to be generous!
Put your minced onions in the pan and let them gently simmer. Be patient, let those babies get caramelized. Then add the garlic and the Worcestershire sauce.
Add your peppers, let them melt, and reduce. You can then add the crushed tomatoes.
Now, the real party begins. Let all the ingredients get to know each other for a couple of minutes (about 10 in low/medium heat).

It’s now time to add your eggs. Start by doing some little nests in your preparation by using a spoon. Crack one egg into each hole, reduce the heat, cover the pan and let it cook for about 5-8 minutes. My preference is when the yolk is still soft, so you can dip your bread in.

Once your eggs are cooked, take the pan off the stove.

Add the feta cheese, the avocados, the spring onions, the chili flakes, the cilantro, and the lime.

Serve with some good pita flatbread or a crunchy French baguette.
